Yes, I think you have the heat turned up too high.

Here's what I do and it works every time:

Get a really good non stick skillet with a top. Put your heat on medium to a little over medium. Spray a quick spray of olive oil or put a little dab of butter in it.

When it's thoroughly heated, crack your eggs into it. When the edges start to turn white, put the lid on the pan for a few minutes (I have a glass lid so I can see what's going on in there!). When the eggs whites are completely done on the bottom, with just a little runniness on the top, I turn them over, salt and pepper them and leave the lid off till they are done, which doesn't take long.

They turn out tender and delicious every time!

Thank you!! I'll try that next time I have fried eggs! I suppose this would also work with a little bacon grease added for flavor!

I agree with this one all the way. When it comes down to the "druthers, I go with fried lightly and the yolk being "runny" to sop up with some toast! Scrambled are fine...but they are best and easiest camping, fishing, and hunting trips! LOL

At home on Sunday? Fried runny yeller with toast and bacon and grits/hashbrowns! And NOTHING on them but lots of pepper! LOL

Cathy--if you don't want to bother flipping them, you can even throw in a little water (1/4 cup or so), cover, & just let them steam til the white is opaque over the yolks. After a few tries, you'll know exactly when they're ready to your liking. I figured this one out after breaking the yolks half the time for 20-30 years. My almost 90 year old Mama, can flip em blind-folded & never break a yolk

Some do have that talent (turning eggs that don't break), don't they?

Never did either chore, nor have I ever even heard of them. I also never liked black eyed peas and remember being overjoyed the day I finally got that message through to my mother who stopped buying them by the time I was a pre-teen.

Well, both egg tricks worked! Thanks, y'all!

I have a new stove here (ceramic cooktop), and the large burners run hotter than I'm used to.

The numbers go from 0 to 10, and I am used to cooking eggs on about 6......I had to turn this one all the way down to 3 to get the eggs to be fairly tender, whether using just butter or adding water.

Happy fried eggs......nice and cool up here in SW CO....but I'll be headed down to Texas next month sometime. Can't wait. I'm soooo HOMESICK....
