I moved this thread to the Texas board as OP seems quite reasonable to me - want a Texas chili recipe or three? Ask a group of Texans!

I may add mine later if anybody wants a Texifornian chili recipe.

The more, the merrier! The one I have used for years is in the New Mexico recipe section!

LOL God only knows what all got put in the chili the cook served up long ago on the trail drives, but my guess would be there was probably always the old staple of beans added and you can't get anymore Texan than the trail drives!

As for myself, I like it both ways, w/beans and w/o beans. I also like it year around, no waiting for cool weather for a good bowl of chili around here, it's good summer or winter. Leftovers (if any) goes on enchiladas or hot dogs.

LOL!! Good ole chili dogs....I often wonder what ended up in the chili that trail cooks made! One reason for using hot chile was that it helped as a preservative, and helped disguise rancid food!
