I learned about sweetbreads (thymus glands) when working in the Ag Dept Meat Lab at Texas Tech....we'd sometimes get leftovers when they were using a carcass for research. Couldn't stand to touch them or cook them, but that didn't keep me from eating them after hubby cooked them. Don't suppose there is anywhere you can buy them....never have seen them in a meatmarket anyhow.

You should be able to find them just about anywhere in Texas. I would ask the butcher at your local HEB about them.

He is on the money above. I know that seasons can be opened at anytime in Texas by Texas Parks and Wildlife. These are not yearly occourances though. The license I believe is called a GAINS license, I could be off, but if I remember right. I lived around Lake Livingston, and had a body of water that come off of it and flowed through our ranch as a kid, and my father had a license at once. I don't wanna incriminate myself, but many people hunt them without licenses. I wakeboard year round, and so does the local Game Warden from my home county. A few years back gators were becoming a neusance on White Rock where we ski, so he actually went out with us one night spotlighting them. I wouldn't suggest this by any means though...lol.
