That might be because Paris is NORTH east. Haha Also, you might be surprised what goes on outside of the little towns outside of the so called "big" towns. When we lived in Deport, Paris was considered a "big " town. I never heard of anyone eating coon around Paris, but that (Deport) was where I was first introduced to swamp rabbit, and believe me, it was good.

I've eaten it...grew up in a small south Texas town. In Home Economics class we actually fried up some squirrel since one of the guys in our cooking group had some in the freezer.

I wouldn't say it's a staple of Texas cusine but I'm sure some country folk eat it, most animals are edible.

My husband grew up like some of y'all, frog giggin, hunting all kinds of animals, noodling catfish, etc. I don't know that he ever ate coon, though, I'll have to ask him. He grew up in Forney, east of Dallas, back when it was a little hick town. You might still call it a hick town but it sure is growing now!

After we catch us some frogs we can clean up and and fry us some frog legs.
Yes, restaurants around here DO serve Fried Frog Legs. Mostly cajun ones though. Restaurants that is not the frogs

Oh I had to ask! Read the article and I'll get my meat from the store. City guy here that would not survive the wilds very well, or at all. Course I have the song "Froggy went a courtin'" in my head now and can't imagine killing little froggy. Although frogs are very annoying when you're trying to sleep!
