I used to know an ol' boy from Colleyville who once told me he used to hunt coon back when Colleyville and surrounding areas were mainly country. So yes, I'm sure there are other Texans who have eaten it, like some here have posted!
And Lindsey, coon is just a shortened version of raccoon. Just because some idiots years ago gave it another meaning doesn't mean it can't continue to be used in the manner intended.

Gopher snake.
Had some city folk move in across the way from us and saw them freaking out and taking a shovel to something. Thought it was a rattler they were trying to kill.
I went over and saw they had killed a harmless gopher snake, LOL. So, I thought I'd give it a try. I cooked it in the skillet with a little butter and seasoning. Tasted just like white fish. And yeah, there were lots of bones, but I've had rock cod that were just as boney.
I gave the skin to my brother who likes stuff like that

Funny I should run across this thread right now.......we were in Quitman (East Texas) a few days after Thanksgiving last month and my husband was out in an oil field on business. One of the workers, a young black man, said he'd had a great Thanksgiving....he'd smoked 8 coons for his family and they'd had a real feast, and they were wanting him to do the same thing for Christmas. Made my husband feel a little guilty and wasteful.....he shoots at least 2-3 coons a week in our backyard for raiding our orchard and garden but we don't cook them - just throw them over the fence for the vultures. We have the happiest, fattest vulture family in the country!

im in mississippi out ner the honey swamp we get them in the traps.opos too we use them for trot line and crawfish dogs get some too i like them enough they will over run a area at times run in packs cause trouble we like ettouffee or coon co co vin.

Do you do this often when your neighbors have some kind of pest to kill?  Just mosey on over and help yourself to a nice, juicy rat, say, and fry it up in a pan?
