If you want "lots of things to do" then you will probably want to be near a big city. I would recommend places on the outskirts of big cities like The Woodlands near Houston or Round Rock near Austin or Flower Mound near Dallas.

Texas is huge has a variety of settings and activities to offer. You really need to be more specfici in your goals. Do you want to be near an ocean, lake, prairie, hills, forests, big cities, small towns. A lot to choose from here.

Then I would suggest the Houston area. Some nice suburbs include Sugarland, Katy, Cy Fair, Spring, the Woodlands, and Clear Lake/ Friendswood.

Try Far West/Northwest/North San Antonio. Good place to raise families. You have Fiesta Texas and Seaworld to name a few. Also, you're next the the Texas Hill Country (lakes and rivers).

Check out my neighborhood in the City of Dallas, it's called Lakewood. It's a great place to raise a family with good schools and a safe environment. It's near the city center, so it has many things to do within 5-15 minutes.

View from White Rock Lake, in Dallas:
Here are some pictures of downtown Dallas:

And some pictures of Highland Park, a neighborhood in the center of Dallas:
It consistently has the best schools in the state, as well as one of the lower crime rates. Because it is in the center of Dallas, it also has a lot of things to do within 15 minutes.
I must say, that I would certainly not call the suburbs of Dallas or Houston the prettiest or the safest. Instead, they are the blandest and full of the people that cannot afford to live in the city.
Here is a photo of the Dallas skyline from my office window:

Fair Oaks Ranch in Metro San Antonio is both charming and peaceful. Close to both San Antonio and the city of Boerne (also of Metro SA) you get not only the advantages of big city shopping and eating in San Antonio but also small town main street shopping and eating in Boerne.

You should check out the Woodlands. About 30 miles north of Houston and between an hour and a half to two hours from Galveston Beach.
here are some photos I took back in April of last year. From an old point and shoot camera:
