Just drove through downtown San Saba last week on the way home from the Davis Mountains. Didn't stop but it looked very nice. Some wineries and other interesting shops. I haven't seen anyone mention it yet.

Fort Davis is also quite nice.

Another nice downtown is Belton but perhaps that isn't really a small town.

Belton fits within the 25,000-people boundary I gave, and is smaller than other towns people have mentioned.

I have been through San Saba once and years ago, but do have good memories of it. I also liked the courthouse square in Brady, I think it was.

My update to this old thread - Since 2015 I have acquired a new... ahem... road trip partner. We realized that you can still road trip and be safe, so within the past 2-3 months we visited:

Brenham - downtown is still great
Lockhart - lively downtown square, go there hungry, added this to my list of potential places to land
Fredericksburg - still great, but feels more commercial and crowded now
Round Top - haven't been in many years and it has grown a lot! wow!
Fayetteville - love their town square, but it was really quiet, also they had a really nice hotel that seemed out of place in such a teeny town

We went to Rockport in the middle of spring. If it weren't for hurricanes I could definitely settle there.

Drove through downtown Columbus while returning from hurricane evacuation. That looks interesting enough for a return visit.

Went to San Marcos and Wimberley right before the pandemic started. I haven't been to Gruene in a long time.

After reading the above posts I want to visit Belton. The town size is the sweet spot for me.

Columbus is a hidden gem. A few unique finds there - like the Santa Claus museum and the castle-shaped water tower that now houses a small Confederate Museum. Also if you like old truss bridges there are a few you can view from the Colorado.

I can't believe I've never pulled off the interstate and visited Belton either. It's pretty close to me and after reading about it here, I likewise need to visit. The Bell County Courthouse look like a nice one from the photos.

I will definitely re-visit Columbus. I love unique, so those are all things I enjoy. Since we detoured through the town itself off the interstate, we did end up on a large, old, truss bridge. I wanted to stop, but we were in evacuation traffic even off the interstate.

I have family north of Austin, so one day I'm going to detour to Belton.

I forgot to add Nacogdoches has a beautiful downtown.
