Default Restaurants in Weimar, Texas?

I want to meet a friend for lunch. She lives in Southwest Austin, I live in Sugar Land.

It looks like Weimar, Texas, might be at the halfway point. Can anyone suggest a good restaurant there? Somewhere open for lunch that would have something vegetarian for her to eat?

I'm also open to suggestions that are in towns close to Weimar.

Tarrytown is on a distinguished road
there is some good bbq off the interstate in the gas station, get their sausage. there also is a good mexican restaurant in town with very good chicken fried steak.

The best restaurant in Weimar recently closed. That was the Mexican place on I-10 and US 90. The best close-by is the Iron Horse on US 90 in Schulenberg. She has outstanding food.
