Side Dish of Texas!
Ok...ONE more poll, y'all. And after that, I swear I am outta here to go eat some of this good stuff! In THIS case, it is a variation as in what "vegetable" would be the one to best represent Texas?

I love it when you 'beat me to it' on food thread ideas, Rebby!
Since a bean would count as a vegetable ( technically, it's a legume, but we've always considered them vegetables since they grow from the ground), I would think that the side dish of Texas would be pinto beans. Now, that's what I've always thought, but you could spew out about three or four answers to this ponderment. So, basically, I'd have to say pinto beans.
I'd toss them in a crockpot with water seasoned with salt and pepper, and I'd add some pork jowls for some good flavor. Good eating in my book.

Wellll, ol' buddy...I am being very liberal in exactly how "veggie" is defined. In fact, I was TRYING to figure out if "cold sliced salted home-grown tamaters" wouldn't count! *grins*

You forgot fried green tomatoes. I think it would be a toss-up among the following...red beans, blackeyed peas, fried potatoes, although I like all of the above mentioned except coleslaw, which I can take or leave and grits, which I definitely will leave. Case, you are right on the money with the tomatoes, a sliced homegrown tomato will certainly improve any meal.

You did have to put this up at dinner time. Now I'm hungry and will be gone for a few hours.
Pinto Beans cooked Cowboy style is the best. Goes with everything.

I voted fried okra just because I like it so much, but I have to admit that we eat a lot of ranch style beans and pinto beans around here.

Should have included onion rings, and tater tots (possibly the same thing as your fried taters, but you included hash browns, so I don't know if what I'm thinking of is included!)
