Default Dallas to Santa Fe

We are going to be driving from Dallas to Santa Fe on interstate 40, probably stopping in Amarillo for the night. Since we aren't in a hurry, I would love to know some interesting places to see along the way that's not too far off the highway as well as any good places to eat.
