OP, I'll try to comment on some things you've said.
Seafood restaurants: People seem to like Sartin's and Floyd's.
Rao's Bakery may be the best bakery in Texas, period. I have travelled globally and their gelato is awesome!
Dippity's in Lumberton has one of the best burgers and the jalapeno chips (fried jalapeno slices) are great!
You may want to not let people know you are progressive. I heard the N word used to describe President-elect Obama during the campaign way more times than could ever be counted, and given as why they wouldn't vote for him. People in the region are extremely racist, but generally nice if not speaking about race or religion. It is also a very Bible thumper region too.
The country towns are very quiet and peaceful. You can enjoy an isolated life or mingle with neighbors. People are easy to make friends with.

Yet and still, Jefferson County voted just like the big-city counties, majority for Obama. It was the only 'medium' size county in the state to do so.

I am seriously going to attribute that to massive turnout in Port Arthur and Beaumont in addition to the fact that there are still a large percentage of people in Jefferson County that think. But it was close and it should not have been in a county that is so pro-labor and generally solid Democratic. I just still can't get over sitting at Sartin's when I was visiting and listening to the N word describe Obama over and over and over again. And I was treated like the freak for voicing my opposition.

I am looking to move to beaumont or the area and I was wondering by having biracial kids what area would be the best fit for my kids. I having been reading and see people are posting things in here about racism and hillbillys so i am just curious is the hole area like this
