Default A. Bourdain - Mexico/TX Border

Did anyone see A. Bourdain's No Reservations show on the Travel Channel last night? It was very good, I wish they would have gone further down into the Rio Grande Valley border towns. Anthony went to Ma Crosby's in Acuna, that brought back a lot of memories!

Oh, that was a good show. I just happened across it after it had already started. Because there was a cloud in the sky some place over Texas, my satellite TV receiver went into its "searching for satellite" mode so I began "channel-surfing" and came across the show. I missed the first part and was especially interested in knowing where that particular bar (TB's Bar and Grill, Del Rio) was located. I set my DVR to record and, sure enough, it recorded the entire show. It was just an hour long and left me wanting more. But, of course, that was all of it and next week he (Anthony) goes to Italy or some place boring (at least compared to Texas). Whatever, I set the DVR to record the remaining shows as this guy is pretty good himself. I honestly think that visit will bring him back to Texas as he seemed to thoroughly enjoy it quiet a lot. So, maybe there's more (of Texas) in the future. Those boots seemed to fit him quiet well.

So, as soon as we get a significant norther down through the state, I'm back on the road again and hope to make that one of my stops.

Regarding my previous post (above), I have a question concerning preparation of the chicken fried steak shown being cooked at TB's Bar and Grill. If you watch the video you'll see that they cook it on the grill and I've never seen that done but, like a hamburger, I see no reason it would not work and obviously it does. I've always thought (and seen) chicken fried steak as being deep-fried. I normally do mine in a cast iron skillet so as to have gravy makings. Deep frying takes too much oil (plus, I don't have a deep fryer) so I don't do that, only putting enough oil in the skillet (a small one) to barely cover the steak. Then, after I fry the steak, I drain the excessive oil, and make cream gravy.

Now that leads me to still another question . . when chicken fried steak is deep fried (or done on a grill), where do you get the gravy fixings? Out of a can or cardboard box? Yuck!

Now I'm hungry.

Thanks for that - I tuned it just after this I think, right when A walked into Ma Crosby's.

I've never made chicken fried steak, but usually you make the gravy out of the pan drippings.
