Default Recipe for Chess Pie

There recently was a poll re: favorite pies here on this forum. There were multiple posters who stated that Chess pie was their favorite. I had never heard of this type of pie, so I looked it up on the internet. It looks to be a lemon custard type pie. Is that correct?

Also wondering if any of you Texans have a great recipe for this pie that you would like to share with me?

Ah, I'd be so happy to share my Mama's chess pie recipe.....it was her favorite pie. She usually put lemon flavor in it but you can leave it plain or put in a little pineapple juice instead. The key to a chess pie (and how it differs from a custard pie) is the corn meal - it's essential. Hope you enjoy.....

Lemon Chess Pie

1 2/3 c sugar
1 T flour
1 T cornmeal
4 eggs, unbeaten
4 T melted butter
4 T milk
4 T lemon juice
1 grated lemon rind (lemon zest)

1 unbaked 8 or 9 in. pie crust

Combine sugar, flour and cornmeal - toss lightly with a forlk. Add next 5 ingredients; beat with a mixer til smooth and well-blended. Pour into unbaked pie shell. Bake at 375 F about 35 inutes or until top is golden brown. Good either warm or cold.

We had Chess pies quite often when I was a kid. I'll ask my mom how she made hers. If the cornmeal is a common ingredient, I had no idea!

Thanks Muhnay for all those great links! Why do a lot of the recipes call for vinegar? Gayle's recipe doesn't call for it. Does your recipe call for it, Cathy? I would rather not put vinegar in it--that sounds nasty.
