I hit the road to Tyler a minimum of twice a year. Blue Moon Gardens (in Chandler) and The Shed (in Edom) - good food, great plants, a walk in the Rose Gardens ...... It's a tradition for both spring and fall.

Gladewater Round-Up Rodeo
I'm sure there are other rodeos to be found in during the time frame you're shooting for, but Gladewater hosts a very good rodeo in June of each year.
I believe this year's event is June 8-10, or something real close.
If you were to choose a Northeast Texas visit you could include Jefferson, Caddo State Park, Marshall, Longview, Gladewater, Kilgore, Tyler ... all within a relatively short distance.
My personal thoughts on your trip:
Being in your twenties ... I would sure think Fort Worth would be a great trip for you. You don't have to go into Dallas, just stay in Fort Worth and go to Billy Bob's, The Stockyards, Sundance Square, the museums, the Botanical Gardens, the Zoo, etc. You could take a short trip to Glen Rose to see Dinosaur tracks, or visit Granbury, Weatherford, or venture over to Mesquite for a fun and entertaining indoor rodeo.
If time (and money) is not an issue ... drive from Fort Worth to Waco, to Austin, to San Antonio. Plenty of history along that route.

some local rodeos are in Athens, Nacogdoches, Gladewater,Jacksonville...just to name a few

Jasper is a boring place for sure ... I live about 30 miles from there and I think you could see all you need to see in , oh, 30 minutes or so. My dentist is there ... he11uva good practitioner but hopefully you won't need him!
If you still go to Jasper hire a fishing guide and go out on Texas' largest freshwater lake. Then eat a Burger at the Stump Restaraunt ... Texas sized burger.
