TexReb, my good Friend, you know I gotta comment on this one......I will say the most evil (and by evil, I mean irresistible) Texas cuisine would have to be Texas Sheetcake.

Lorda Mercy....dang stuff is downright sinful. I still prefer Momma's pecan pie (by a smidge) back in OkieVille, but Texas Sheetcake gives that pecan pie a run for its money, LOL.

- A pound of sliced beef at one of a dozen places that most of you can name....."no that's ok sir......you can leave the fat on."
- chicken mole enchiladas (filled inside & on top with queso blanco) from that joint on Perrin Beitel in SA.
- King Ranch Chicken Casserole that my mom used to make.
- CFS from Ma Goodson's.
- Desert? How about that health food favorite......Tres Leches Cake!

Talking Case Loves Bacon

Where do I begin, TexasReb?? Let's see, now. Chicken fried steak, cream gravy, bacon, pan-fried potatoes, real Texas chili, sausage (Jimmy Dean and Owens, both Texas-proud), bacon, thick steaks, enchiladas, jalapeno cornbread with lots of butter, bacon, fried chicken, fried cheese, big omelettes, fried catfish, bacon, ribs, brisket, spicy sausage, bacon, crispy tacos, refried beans.........

Did I mention bacon??

Today, I will skip breakfast and have an early dinner at a little truck stop in Whitesboro, TX and I'll have their chicken fried steak.

It's not exactly hand breaded, but still amounts to probably 3/4 lb of meat, a pile of pan-fried taters, a salad and enough gravy to float a battleship. Yum, yum!

When I come out, I won't be able to breath, but who cares?

Hmmmm. Wonder what my Doctor would say if I invited him along?

Is that REAL gravy???? Not from a powdered packet?? Gonna have to hit the road!!

In the meantime, a person could try a fine plate of Skinny Fries at Skinny's in Weatherford......fries elevated to full glory with grilled onions and jalapenos.
