I meant to say "how they bake them," but you know these stupid iPads. Montreal bagels are baked in a wood-fired oven, giving them a crispier crust than New York's bagels, which are baked in a conventional oven. As another posted out, Toronto does have some excellent bagel places along Bathurst St., we just don't go around telling everyone how great our bagels are. Now if only the quality of a Gryfe's bagel was available outside Bathurst or Bayview. So perhaps what we really need are more good Toronto bagels, more widely available....and Montreal smoked meat.
