If you are that adverse to the potential for colder weather and want to stay in the USA then Florida is your only option as cold and snow can be a potential reality anywhere else, probably not likely in most areas of southern US but we'd hate to tell you of a great place to go then you get there and experience the coldest snowyest time on record..

I second the San Antonio suggestion plenty to see and do in and around San Antonio Alamo,Riverwalk,Market Sqaure there's tons of hotels downtown that are right on the Riverwalk. In Austin you can tour the State Capitol or check out the bars on 6th street and all the live music venues stroll South Congress check out the shops and restaurants. Both cities are close enough that you can stay in one and take a day trip to the other. Here's some links on area attractions and hotels.

The themed parks are definitely on the agenda ... I just need to research the feasibility of visiting other parts of Florida while I'm based in Orlando via public transit ...

I know you arent much of a beach person, but the beginning of December is notoriously cheap to take a cruise. Lots to do, lots of scenery, lots of good food!
