These are the flagship hotels of their respective chains. However at these hotels, you don't get free internet or free breakfast or in room microwave or in room fridge like you do at their lower cost hotels such as Residence Inn, Hampton Inn, Courtyard, and Homewood Suites.
So why would anyone stay at these places? Just for the fancy chandeliers in the lobby?

- Full Service Restaurants
- Larger, well connected conference rooms and ballrooms
- Spas, pools, golfing options
- Concierge
- Bell service
- Valet Parking
- Room Service
- Fancy Chandeliers
- Nicer beds, pillows, etc
- Larger rooms
- Luxury Suite Options
- etc.
It's nice to come back to something nice after a day out. I don't really see any drawbacks.

It's nuts.
The Hilton Garden Inns offer the free internet and microwave/fridge in the rooms ... I dunno about the breakfast as I usually don't have time but the HGI are my preferred choice ... Always a positive experience.
I don't necessarily want a free breakfast at the place I'm sleeping.
I enjoy b&b's, but often I'd rather walk to a café.
OTOH I've stayed at the Rome Airport Hilton twice, just the night before we've left Italy, and we will be staying at the Madrid Airport Hilton at the end of this month, the night before we leave. They have free shuttles to the airline terminals and also the center of town.
I like the swimming pool, too.
Chains can be boring (let alone expensive!) but there are times when the convenience and predictability come in handy.
I always stay at Marriott and Hilton's for frequent business travel. Never had an issue with anything you mentioned. You probably stayed at one, had a bad experience, and now just bad mouthing the entire chain.
And I'm glad the rooms are non-smoking...your smoke gets in all the room fabrics, wallpaper, carpet and is impossible to remove without replacing everything. Who can blame the hotel chain for not wanting to accomodate people smoking cancer sticks.
The flagship hotels are usually in great locations (center of city) and typically have very nice rooms and other facilities. On the other hand, internet is a total ripoff and the restaurants are expensive.
I used to use them a lot on weekends. On weekends you can often get great prices on the travel websites, get breakfast at a coffee shop nearby, go to the museums, dinner at somewhere cheaper and maybe ethnic. Makes a nice, not unreasonably expensive weekend with a bit of luxury in the room.
