Which Mediterranean island?

Well, the more I read into Spain/Morocco and Greece/Turkey, the more I'm convinced I'll love either trip. I'll buy my plane ticket in a month I think, so I'll just have to compare costs at that point and if there is a clear winner in that category, that'll be the deciding factor. The wild card, is what's going on in Greece right now. I don't plan on going to Athens but I'll be watching the Greek crisis and how it's affecting the islands closely.

Look into the Aegean Island of Skopelos. I spent five days there some years ago, rented a scooter, and just wandered the island. The main city has plenty of tavernas (and most deserted beaches also had tavernas) for relaxing and meeting people. I liked Skopelos better than Crete, Santorini, and Mykonos. Too many tourists for my tastes.
