I don't know the dining options since I carry my lunch and eat on the lifts.
But Eagles Nest will have MUCH better views. It is on top of the ridge with views down valley, south and north back toward the town of Vail. Mid Vail sets in a sheltered valley with very limited views. Heard there is a new high end restaurant at Mid Vail, but I know nothing about it.

The high end restaurant on the back side of Keystone involves two gondola rides up and two back down, so lots of view opportunities.

Only if you go up Game Creek for dinner, Bistro Fourteen is fine for a burger, but nothing special. Mid Vail only has the 10th for dinner, it's nice for Aprés but overpriced for dinner. Once daylight savings starts in March the views from the 10th in the early evening will be great for sunset.

Any of these places, it's going to be night and unless there is fresh snow and moon light to make it bright, there might only be so much to see and especially inside. Certainly later in the winter you might have a later sunset.

I think it's more about the journey by snowcat or sleigh and the idea of being up on the mountain at night.

I've been up to Allies, Zacks and Beanos at Beaver Creek and Bachelor Gulch. It's pricey, but it's cool to do one time. Actually these experiences can be as much or more fun in summer when the weather in evening is nicer.
