Where are the best places to take a food-centric vacation to? Let's focus on places in or relatively accessible from the US mainland. You can include places like Barskoon, Kyrgyzstan if you really want to but it would probably be more practical to confine our answers to places an average person might be able to travel to for a food vacation.

I'll start:
1. NYC (Manhattan)
2. San Francisco
3. Tuscany region of Italy

Singapore supposedly has an amazaing food scene, but I haven't had the chance to check it out myself.
Portland, OR for a hyper-local farm-to-table scene

My town has been known for fantastic lowcountry/southern food. And that's Charleston, SC. There's SO many upscale restaurants here and many receive awards for the great food they serve.

Tony Bourdain's show, Parts Unknown, is apparently featuring Lyons Sunday night. Lyons/Dijon would surely be on the list. Agree with Charleston also.

I've found the food in and around Portland to be exceptionally good too, although not necessarily due to a "hyper-local farm-to-table scene" whatever that is.

Memphis - BBQ (although the best Memphis bbq is in my backyard smoker).
New Orleans - Cajun food.
Albuquerque and El Paso has some darn good texmex food.
Portland and that area? - maybe the microbrews. Liquid food, I guess that qualifies.

As you can see my tastes are simple, and spicy.

Someone mentioned Singapore - been there done that - Food is good but not noteworthy. Italy - you simply can't find a bad meal there.

For me, probably New Orleans, which is more creole than cajun, I believe. But I would add the rest of southern Louisiana to go along with it anyways.

Second would be the Southwest and that whole scene where Mexican and American foods converged. New Mexico, Texas, Arizona...

Out of the states, Mexico for sure. I am also very interested in Bengali (the northeast of India) food, though I have no idea what that should taste like. It sounds fascinating to me still. Also Vietnamese.

Some people rave hard about Malaysian.

Those are my favourite destinations so far when it comes to food:

San Sebastian, Spain: That's right. Not Madrid and Barcelona. San Sebastian is the place to go for great food.
Kyoto, Japan: Food heaven.
Hong Kong, China: Didn't have a single bad meal there. One of the reasons I fell in love with the city.
Paris, France: An obvious choice.
NYC, USA: Most of you probably know the city better than me.

If variety of the offerings is the judgement of 'best' and there is no budget, I'd have to say NYC or San Francisco. Maybe LA. You can find every cuisine in those cities.

Since we travel with a budget in mind, I'd have to say Kuala Lampor and Singapore rate pretty high. Italy also surprised us with the reasonably priced (and expectedly delicious) pasta and pizza and wine.
