You'd be flying Friday and returning Monday? That only give you two full days. Vancouver and Whistler is pretty ambitious for such a short period of time but could be done in a whirlwind. Chicago isn't likely going to have the most enjoyable weather in a week and a half. San Diego would have better weather but still a long haul for a short period of time.

well, i would be flying out thursday night, landing early friday. so after a little bit of sleep we'll have fri, sat, sun and mon (red eye monday)
For a long weekend I wouldn't fly to the west coast, but that's just me. Of your choices I'd pick New Orleans at this time of year, for the weather, and is a perfect length of time for a visit there.
Of your original choices (San Diego, Chicago, Vancouver), I would probably choose Chicago. It's cheaper, flight is shorter, leaving you more money and time to explore your destination. If you stay in the main drag (mainly Magnificent Mile and it's surrounding areas), you can also get by without a car, whereas Vancouver, a car is required.
There are so many things to see and do in Chicago, from comedy club, the music store that's been opened since WW-II (I need to ask my husband about the name, but they have fantastic jazz collections), fantastic food, good music scene, museums, etc.
Vancouver is more suburb-ish. Although it has Granville Island Market, the best farmer's market I've ever visited in North America, bar none.
If you're looking at New Orleans, that would be my top pick. They're gearing up for their annual jazz festival now (you can tell I love jazz ). Plus the weather will be warmer than Chicago.
