Down the I-5 to LA, then take I-10 East into Florida, At Tallahassee, Take Alt US 27 to Ocala. From there, straight to Orlando. That would be my recommendation for January. Even then you can find some wintery weather in Northern Cal. I got snowed in at Dusmuir, a couple of times back when I made that run (30+ years ago).
Some locals in So Cal can give you better guidance on getting around LA than I can these days.
A shorter route is to run down and pick up I-84 towards Salt Lake and 80 across til you can cut south to Denver. Then US-287 down to Dallas-Ft Worth area, and I 45 to Houston, and pick up I-10 East of Houston.
If you're not in a hurry, and don't mind being at the mercy of Ol' Man Winter, that can be an adventure.
As weird as the weather has been so far this season, I'd recommend the LA route.

You will see cold weather from East of LA, all the way across West Texas, especially at night. The desert can be cold at night.
And Mind the weather. It's been weird this year.
Stop at truckstops like Pilot and Flying J, for fuel. They will have active weather reports.

Simply look at the weather forecasts a few days before your trip, focus on the mountain passes, and adjust your route accordingly. Don't obsess with the weather, remember that hundreds of thousands of trucks drive cross country every day in the winter.

If not, I have to say that you have obviously not driven across I-80 or I-70 during a blizzard. Or even shortly after one.
And I would not recommend trying that while towing a pop-up camper.
Driving in Winter weather conditions is not something to be done on a whim. And it doesn't take a lot of time and effort to track the weather while your traveling. and even have a couple of alternate routes figured out for when the weather ahead changes, or have potential stop points planned.
I don't mean to scare our traveler. it is a simple task to be mindful of the weather and plan your travel for safety. Especially if you have your family in the car with you. I've driven a lot of roads, when schedule required, and weather was inconvenient, when alone or with a working partner, that I would NEVER knowingly attempt with family in the vehicle. (The wife and I have found ourselves in some very interesting weather a few times.)
Common sense should prevail. If your young an alone, have at it. As I said before, it can be quite the adventure.

I think the OP can manage to click on Accuweather's travel forecast, or watch the weather channel. Do you seriously think the north is ravaged by non-stop blizzards in winter?
Yes I've driven quite extensively in all sorts of weather in the northern US in winter. Obviously, one avoids driving on or after a blizzard, as do the hundred's of thousands of tractor-trailers that cross the country every single day of the year. You seriously suggesting that this poor guy drive all the way from Seattle to LA, almost 1,000 mile detour? Surely YOU jest. He has plenty of alternative interstate options in the middle of the country to bypass bad weather without driving 1,000 miles off course.

It is actually only 500 miles difference. Half a day difference to spend most of the trip not worrying about the winter weather?
Me, I've seen enough winter driving. I would do it that way in January.
