It would take too long to figure out which roads are US highways or state highways or whatever LOL. I'm kind of afraid to answer your question, and yet I can't resist. And I have no shame about my ignorance :-)
I live on Hwy 101 in CA and never realized it was a US highway.
What's the definition? One that travels over more than one state? I always called those "interstate highways." Or I-this or I-that.
If so, without having to Google it, Interstate 5 (I-5) from Grants Pass, OR to Redding CA is one of my favorite major interstate highway stretches, as you can see Lake Shasta, Mount Shasta and Mount Lassen. When there's snow on them (and preferably not also on the highway) it's breathtakingly beautiful.
The Interstates (I roads) are all limited access roads. You can only get on or off of them at a specified exit (overpass/underpass).
US Highways are the system that was in place prior to the Interstates in the 50's. You can tell by their shield designation.
US 16A from its junction with SD-87 to Keystone, SD - the Iron Mountain Road. Plenty of single-lane tunnels that frame Mount Rushmore, Pigtail Bridges, and occasional segments of single lane divided highway that run right through the forest.
I like US Rt. 1 between Baltimore and Washington, D.C.
It's really an awful stretch of road, but I appreciate it for its reputation as being about the sleaziest part of Rt. 1 from Key West to Maine, back in the pre-Interstate days. There are still some remnants of those days remaining.
My parents tell me that before the B-W Parkway, and later, I-95, were built, every Monday morning the local news would give the weekend Rt. 1 body count.
US 83 from North Platte, NE to Liberal, KS to get a sense of how truly massive the Great Plains are.
US 550 from just north of Albuquerque to Silverton, CO
US 180 from Grand Canyon Village to Deming, NM
And one of the ultimate motorcycle roads, US 212 from Billings, MT to Mammoth Hot Springs, WY
One bonus in the Natchez Trace from Nashville, TN to Natchez, MS. The road is a National Park.
Good choices. 14 from Ranchester Wyoming over towards and through Yellowstone national park. Also 16 from Buffalo Wyoming to Cody Wyoming.

I like the drive from Phoenix to Vegas, the drive from Flagstaff to Salt Lake City (or at least to southern Utah), and the drive from CO Springs thru ABQ to Tucson.
US 180 from right outside Ft. Worth to El Paso is interesting. At one point there's a sign that says "Next Gas 175 miles." And they really mean it. I did the trip once at night. Millions of jackrabbits along the way all stop and look your way when you approach. Millions of eyeballs glowing in your headlights.
