My initial intention was to do a series of one way flights but that came out to be more expensive. Through this thread I was able to find a flight itinerary that are a series of one way flights but its priced as a round trip fare.

As an example, I saw an itinerary for 2 for $2800.

IAD - Munich
Munich to Athens

Athens to FCO

FCO to Brussels
Brussels to IAD

I think if I had done this individually it would have come out a lot more expensive. We're gonna go this route, it's a lot of flights to take, but it's better than country hopping if I were to do a round trip fare, arriving and leaving from the same place.

For future reference you're describing a very ordinary open-jaw itinerary. These are typically priced as the sum of 1/2 of the round trip fares to each of the arriving and departing cities, and be booked on virtually any online booking service, or any airline that serves, or has partners who serve, both the arriving and departing cities. Then you simply arrange transportation - flight, car, train, whatever - between the arriving and departing cities.

If you're happy with your arrangements, fine, but just for example, I found IAD-xCLT-FCO//ATH-xLHR-IAD on AA and BA for $967 most days in September, and FCO-ATH for $45, so $2024 all in for 2 pax.

Yep the problem was that when we went on a Europe trip last year the travel company had made the flight arrangements and the trip was open jaw. So I did not pay attention to how that was arranged. I knew what I wanted but I didn't know how to search for it until I got advice in this thread.

If you are willing to fly JFK to Milan, you can fly Emirates for as little $900 total for the two of you. Emirates 2 for 1 deal is back. You have to purchase by Wednesday but the deal is available for flights between Feb 1 and Nov 30th. I highly recommend Emirates as an airline. Also the airport that you fly into is a hub for EasyJet so you can easily hop on another flight to Rome or Athens.
