I grew up near (or in?) "Acadia"... along Canada's east coast. It's a place that never had its own set official physical boundaries. It was a French colony that became somewhat autonomous in practice, then was ceded to the British in an 18C treaty. It might even be the largest "country that doesn't exist", at least by geographic space... some exiled Acadians became Louisiana's Cajuns.

Many First Nations (North American indigenous lands and peoples) could be added to the list. Although, they do technically still exist--or most of them do in Canada, anyway.
