My brother & his family were at an all inclusive resort in Mexico approx. 3 years ago. I don't remember the name of the place.

Also there is a Club Med all inclusive resort in Eilat, Israel (by the Red Sea):

There are Hard Rock hotels all over the place, they aren't all-inclusive? Wait... they probably allow kids, never mind. ETA: the Mayan Riviera location is their only adults-only resort in the Hard Rock chain.

There are definitely lots of adults-only resorts in Bali. And Thailand. And the Mediterranean. Have you done a web search? Try searching for "luxury" resorts. There are plenty of them out there, worldwide.

Try Spain. I believe Melia hotel group (Sandos resort is one of them) has a few there. I personally will NOT go for all inclusive in Spain, their local food is unbelievably good and no exclusive resort can top that.
