Well, as long as we're making restaurant recommendations, let me add a couple.

On your way to Key Largo (or on your way back to FLL after your trip), make sure to stop in Homestead for lunch at Shiver's BBQ. It's been a local institution since the 1950s and is arguably the best BBQ in all of South Florida.

Wow, that is quite the journey. I lived in Florida for 7 years and have been most places in Florida, from the panhandle to the Keys but not all in one trip! I hear you on Key West - don't plan to spend much time there.
