I absolutely hate the process of renting cars at the airport. I prefer to take the shuttle to the hotel, get rested and whenever I am ready have the rental car delivered to me. Is this possible? We'll be staying at the Embassy Suites near LAX.

I don't know if this possible. But perhaps post your question on the Los Angeles forum as well.

Some rental companies deliver cars, but I've noticed more and more that they are discontinuing that service, so I don't know who (if anyone) is still doing it anymore.

I've been to a couple large hotels that have a rental counter on property, but there aren't going to be many of those, and a doubt an Embassy Suites is going to.

Your best bet is to join the loyalty program of a rental company that offers some sort of expedited service. I use Avis, and I don't have to stop at the counter. I walk straight out to the lot, look for my name on the board to find out which spot my car is parked in, and I go directly to the car. I don't even have to talk to a human until I have to leave the lot and there's a gate where they check my drivers license against the contract.

The issue with Airport Pickup is the Taxes and Fees the Airport put on "On Site" Rental Cars can add to to about a 1/3 more to the Rental Price.

Hassle factor, Time Factor, When you will "Start Trip". All Factor all come into play when going off-site (Hotel/OffSite Rental)

Almost all upper scale hotels have a service to allow you to rent cars (using the standard rental car agencies) but you will pay a premium for it.
As stated, some rental car companies (Enterprise I think) deliver cars or will pick you up.
As an alternative, almost all national rental car agencies also have a city location. Many times they are cheaper as well since you don't pay the added on airport fees.

Your best bet, if the Timing (etc.) allows, is to get the car at the "Local" edition of the Rental Company. You might need to take a Uber/Cab to get to it. They are normally in Strip-Malls

Many allow you to return the car to the Airport (For Free). The Taxing location is the Pickup Spot Not the Drop-off

The rental car company website- and the usual travel search engines- will give you a choice of rental location. Have you tried that yet?

(By the way, Expedia was screwed up the last time I used it, it changed rental location from the one I selected. Review your completed reservation carefully.)

This. I've done this many times, both from hotels and from the airport itself to avoid the airport fees on rental cars.

LAX? Just get your rental car THEN go to the hotel. They are all in the same area. Car Rental companies are offsite here--even if you rent from the airport. You have to hop the shuttle (same as you would the hotel) and then go to the car agency. Otherwise, Enterprise does still "pick you up."

Also, good luck resting...that hotel is RIGHT in the line of airplanes and you will totally hear the planes. Sorry :-/

Honestly, I would just take care of it at the airport and be done with it!
