someone posted on one of these Amtrak threads that they bought coach at the departure point and booked the roomette a little ways into the trip and often were allowed to move into the roomette soon after departure...or something like that

That would work ..... assuming you're not travelling during the summer peak and there are unsold spaces. But Amtrak modeled its long-distance equipment upon the great streamliners of the Forties and Fifties, and then as now, there simply wasn't enough equipment to add extra cars .... let alone run a "second section" (train), as was the practice in the golden age of rail travel.
