Just to circle back, we decided to spend about 4 nights in the Salt Lake City area to visit SLC as well as the Great Salt Lake, Ogden (where my friend lives) and maybe Park City. We'll then drive to Moab, with a stop at the dinosaur museum in Price for my young daughter, and then spend 3-4 nights in Moab as a base for visiting Arches and Canyonlands. We will then drive back to Salt Lake City and fly home from there.

Thanks everyone for the many wonderful and very helpful suggestions. We can't wait for our first trip to Utah this summer!

Looks like the minimum is 5yo/40lbs for Fisher Towers, I added a link to a list of outfitters because I was curious too, but I noticed there is now also a motorized boat tour on the Colorado River. There are also some dinosaur tracks somewhere in the area I remember. It's a great place for outdoor adventures for kids & adults.

River Recreation near Moab, Utah - Plan the perfect raft, kayak, or canoe trip.
