I would make it simple for a first trip. Why not do a Mediterranean cruise? No packing and unpacking every day and it's a pleasant way to travel. They deliver you every day to a new place to explore.

Do this in a heartbeat,

Loved the Greek Isles.

Consider a small crew sailing yacht (where you help)
1) can get into small harbours
2) tour will vary with the winds and desires of the crew and passengers
3) can anchor in a beautiful lagoon and swim off the boat (or take the tender to shore / exploring)
4) cook your own food from your own catch.
5) get to know people (locals / crew / passengers)
6) sailing is QUIET and peaceful and fun and memorable

One of our international vocational schools has their own sailing ship out of Macedonia for such adventures... I think I will sign up! (for crewing)

England and Scotland. If that goes well, then New Zealand.

Italy and France are good places to start. For food, it doesn’t get much better. You’re also close to Germany, Switzerland, Austria, CR/Prague, Belgium, etc. if you want to mix it up.

Portugal could be a nice choice too, or Barcelona.

Viking River cruises are fun, you get to see alot of different places, but at a leisurely pace & the same room the entire trip, ( apart from pre & after cruise.) They include daily city tours led by informative guides, we learned alot, we did the Rhine from Amsterdam to Basel a few years ago & I plan on doing the South of France with them one of these days.

Fly to Vienna, and do a small circle tour including Venice and Croatia/Slovenia. In a short easy trip you will see the three major cultural zones of Europe -- Germanic, Latin and Slavic.
