Some great advice up above..

Google Flights is in my top 3 of sites I visit the most.

I've been looking at flights to from the West Coast to AMS/CPH for months for May of next year.

From checking to/from SLC to these spots, in July it looks like the baseline is about 11-1200 RT.

My advice is to establish a baseline and a goal price and set up alerts on Google Flights.. Once something comes up at/near/below that threshold and book it.

As an FYI, I was able to snag a RT on Delta (connecting in SLC) this past April to Amsterdam for $436. The summer is a different beast, but, time is on your side. If you see one for 650 or less, I'd jump on it.

Another problem with booking with different airlines is you will have to collect and recheck your baggage at your stopover point essentially as you are checking in to a whole new flight you have to be there in time (2 hours for an international flight) and then brave the queues and of course go through TSA check again also.
We made this mistake some years ago when we used air miles with Alaska Airlines from Anchorage to Boston and then changed to Aer Lingus for our onward flight, having to collect our bags and change terminals then go through the rechecking process was a pain, we won't do that again !!
