I'm debating whether to go: 1) somewhere that is going to be cooler (60s during the day) but am confident I can fill my schedule with activities that I know I would be interested in or 2) somewhere that will be much warmer and summer like (80s) but I'm not sure I will find enough to do to keep me occupied.
What would you prioritize, the weather or making sure that your itinerary is full?
Unless I'm going somewhere specifically for a beach (which I wouldn't likely do), I'd choose the place with more to do. That said if the place I wanted to go would be cold - like 40s - I'd wait for a better time of year. Weather would only factor into my decision if it was going to be too cold for outdoor activities I might like or...if it was going to be rainy (such as monsoon season somewhere).
I don't even think about it. A coupe years ago, I went to Addis Ababa. I was dressed for August, and going to Africa, what can go wrong? . Well, Addis Ababe is so cold, I had to buy warm clothes when I got there.
I also had an overnight stokpover in Tokyo once, in March, coming from Texas, only at the last minute did it occur to me that Japan has winter.
Here's an answer to a trivia question for you. In what African capital does it snow? Ans: Maseru, Lesotho, and I was there when it snowed. Not dressed for it.

What would you prioritize, the weather or making sure that your itinerary is full?
We just prioritized weather.....we initially booked a week in Sri Lanka but when the forecast was rain and thunderstorms every day, we switched to Goa, India forecast sunny every day.
The only time I’d even consider weather is if I’m going to a beach or camping. Otherwise I prefer off season travel and don’t mind it being less than ideal.
I never let weather stopped me from going to a place I wanted, I just made sure that I checked the weather a few days before going so I could pack accordingly.
Some of the most fun trips I had were done in winter: Seattle / Vancouver in late December, London in late November - the weather was in the 30's and 40's and, in both cases, it rained most of the time with barely any sun. But there were so many things to do and see that the rain and cold didn't bother me.
I always check on the weather before planning a vacation. For one thing, I may not pick the "ideal" weather but I want to pick the "shoulder" season where the weather is acceptable but I get a bit of a break on the prices. I won't go to Orlando over spring break...but neither will I go in July. And no trips to Minnesota from November through May!
I've been on five long trips that were six months or more, where of course you can only roughly plan on what the weather will be like when you get there. I arrived in Europe in May, and had to buy winter clothes in Spain, and flew home from Ireland just before Christmas. But I never felt that the weather was any kind of an impediment to any of my travels.
Sometimes you have to depend on luck. I once drove to Idaho and then Saskatoon in January, and got home literally hours before a fierce blizzard in Kansas. There's also the other extreme, I drove to Kuwait in August, no AC. But travel is travel, and you can't let the weather get in the way.
In China, I was stuck for thee days in a little town because rain had washed out the road onward, but really, it's the things you don't expect that make travel interesting. It's what distinguishes tourists from travelers.
Put a tourist and a traveler through the same unscheduled event, and afterwards, the tourist will describe it as awful and the traveler will say it was wonderful.
