I recall seeing it on the Knoxville TV evening news when the wife and I were vacationing in Gatlinburg TN.

I-87 from Canadian border to NYC has some very scenic stretches through the Adirondacks and the Catskills

While there are not any mountainous stretches, I-10 in Louisiana between Slidell and Lafayette can be particularly scenic since on some stretches outside of the cities you have these causeways that stretch for over 20 miles over the swamps and wetlands providing drivers with a unique view of the surrounding marshland.

That's a great stretch of expressway! I hope someday to get back to the southwest, and see more states in that area. Most especially Utah, that's very high on my list to visit to see as many national and state parks as I can in southern Utah.

My picks for awesome scenic expressways:

I-68 through West Virginia and Maryland(AMAZING alternative to the PA Turnpike)
I-90 from somewhere east of Rochester, MN(forget where exactly it begins), to about Sparta, WI(and vice versa in the other direction. bonus if you have extra time for a slight local road detour, try driving US 61 or Wisconsin 35 for more very nice scenery along the Mississippi River, along with scenic hills. a VERY fast one you could do is US 61/14 north from I-90 to Winona, MN, then southwest on Minnesota Hwy. 43 back to I-90(or vice versa in the other direction))
I-64 and I-77, southeast of Charleston, WV. also I-64 from west of Charleston all the way into eastern KY, isn't bad either(the oil refinery you see at the KY/WV border aside, lol). Either one has great scenery, southeast of the split of both expressways in Beckley, WV(and side note: I also like US 460 east of Princeton, WV to Christiansburg, VA. it is a 4 lane US highway for the whole length through that part, which also is nice)
I-64 east from I-81 to Charlottesville, VA(and back. and ugh thinking about I-81, since I never was a fan about how much truck traffic 81 gets)
I-26 near the North Carolina and Tennessee border
I-79 in northern West Virginia(from where US 19 merges and splits going south from I-79, north to Morgantown)
I-40 near the NC and TN borders
I-196 north of Benton Harbor, MI(bonus if you drive it in the fall, when the tree leaves start to change color)
US 131, north of Grand Rapids, MI(ditto here, in fall it's nice to see the leaf colors change. and yes, US 131 is limited access with exits all the way north to Manton, MI(past Cadillac, MI))
