Would someone that age know about standby and cancelled flights?
She has alot of travel experience but with parents and other relatives along.

Sure it would be fine. But wouldn't you send her with plenty of cash, a cell phone and give her a list of phone numbers to call just in case? She'd call at each landing and just before takeoff. And surely you would book her on the flights earlier in the day- no one would want a family member flying at midnight. So if there were an issue, the airline would put her on the next flight.
Now if these layovers were hours and hours long- then you should get a ticket w/ an hour or less layovers.
