Christmas in Vegas?
We are a British family living in TX for a year or two, and thinking of having a trip over Christmas.
What would Las Vegas be like for a Christmas break - is there much to do for a family, within driving distance?

I have been in Las Vegas during the time of Mid to late December. If memory serves me correctly, I left December 22.
Vegas is ALWAYS fun!!!
you will however find that may of the shows that are normally running will "go dark" until after New Years Eve.
The large hotels are all "dressed" in their finest decorations, and a sight to behold. If you have the opportunity, check out Bellagio and Wynn.
You will also find "the strip" less crowded than usual. Generally, things become much more relaxed that it's normal hectic pace.
Soooo, with the exception of the shows, everything runs as normal, (restaurants, casinos, bars and clubs).
Note: Your question regarding off site recreation concerns me somewhat. I am from the Northeast and really take pleasure in the solitude of the desert, but once you are out of Las Vegas, you either go to Hoover dam or the Grand Canyon. 20 minutes from "the strip" you are in desert, nothing but desert!!!!
I see you live in Texas, beware however, in Nevada there is virtually nothing alive in the desert outside of Rattlesnakes and Scorpions. (even the tumble weeds don't grow lol).
I hope this long winded response helps.
In a nut shell, Go, You'll love it, because no matter what, it's VEGAS BABY!!!
