Since you need a Passport (or Enhanced Drivers License/NEXUS card for Canada) to leave (and return) to the US, the easiest way to track this would be to determine the states whose percentage of residents that have passports is higher than the US average.

So basically residents of California, Arizona, Colorado, Washington, Florida, Minnesota, Illinois, Maryland, Delaware, New Jersey, New York, and Massachusetts are more likely to travel overseas.

For international travel, probably. But for travel outside the State border, probably DE, RI, and NJ, honorable mention to CT.

Maybe Nevada as well, I can't imagine myself trapped in Nevada for the whole life. At least most of them have been to California I reckon.

People in the small states often leave daily. I imagine that anyone who lives near a border does, too.

OP, I thought you meant travel out of state when I read the title.
