Driving route planning from Dallas, TX to Columbus, OH (road trip, Little Rock, Mississippi)

I'll be taking a road trip from Dallas to Columbus and was wondering if anybody have any suggestions on good roads.
From TX I'll be going to Ouachita National Forest, then Little Rock - Mississippi River - Memphis, then Chattanooga through maybe Nashville, check out the Tail of the Dragon, then go northeast until Jefferson National Forest then northwest into Columbus.
anyone been around those parts and know a few good roads?
driving for fun of course. but i don't have time to go to, say Salt Flats or hwy 1 or anything like that.
