Default suggestions: Where to go to enhance a business trip to Abu Dhabi and Dubai

I am from USA, and this will be my third trip to the Middle East. I typically go to Abu Dhabi, Dubai, and Jubail in Saudi Arabia. Also went to Kuwait on the first trip. I really enjoy the region, although a two-week trip is a long time to be away from home...

But, since I will already be in the region, I am looking for a fun excursion for me (myself) to do for 2-3 days. I can usually get cheap airfare from Abu Dhabi to other areas in the area.

Thinking of places like Morroco, Egypt, or etc. Only place that is out of the question is Israel, because I don't want that on my Passport if I'm going to KSA. (I hate that, but I think it is adviseable)

A place with good food, good/hospitable people and things to see is what I am looking for, what do you suggest?

I've heard that Salalah, down in southern Oman, is a beautiful place and is starting to develop a tourism industry, with a few international flights. It sounds really fascinating, and I'd love to go there and check it out. It's a part of the world that very few travelers have ever seen.
