One route is to take I-10 to I-65 to I-85 to I-95. This passes through MS, AL, GA, SC, NC, VA, DC, MD, DE, PA and NJ, before New York finally shows up. My understanding that this is a truck-heavy route.

Another route is to take I-10 to I-95, which crosses into New York via the George Washington Bridge. It's a simpler route but adds 200 miles to the itinerary. This passes through one more state than the previous route - FL. Is this route worth the extra 200 miles because there are fewer big rigs on the roads?

I would take your first route if I had to drive
My choice for NOLA to NY would be Louie Armstrong Airport to Newak Airport via Continental Airlines...
