Travelzoo is a site I check frequently.

Mexico's Riviera Maya Travel Deals: Airfare, Hotels, Vacations & More | Travelzoo (http://www.travelzoo.com/destinations/riviera_maya - broken link)

And just to throw it out there as this is one of my favorite ways to visit the islands of Mexico-
5 days all inclusive (besides tips) to the Caymans and Cozumel for $314.01 per person...this is for 5 people. Carnival cruise from Tampa FL on the Inspiration on May 8th.
Paradise Beach at Cozumel is $12 per person for all day (free is you don't want to do the activities and just lounge around)

You can try travelocity or expedia as well.
And then there is always Club Med!

Try noliotours - we went to Mexico out of Toronto with them (the Royal Decameron in Nuevo Vallarta, just north of Puerto Vallarta) - basic (but all-inclusive) so good prices and it has a nice beach, lots of pools, lots of different tours nearby (Las Caletas was a blast!!) - something for everyone. Check out tripadvisor for reviews. They offer spa services at reasonable rates as well of you want to splurge a little. We loved it.

** When you said Apple I was thinking you were Canadian - if you are American nolitours won't be of much use - travelzoo is probably your best bet, also, google "last minute vacations".
