I have never, ever, in all my life seen pizza made in a brick oven with coals in NYC - this is a trick that is saved for foppish, hip restaurants trying to cash in on the 'authentic' tip.

And, yes, it is the water that makes the difference. See, the pipes in NYC are so old and so encrusted with crocodile urine and rust, that it taints all their pizza with the delicious flavor of YUM. (No, seriously, I'm not kidding).

The fact that YOU have never seen a pizza made in that way hardly makes it new and "foppish". It's a variation on the theme of the original brick oven pizzas in Napoli, Italy. Having lived there (Napoli), I can attest that they were great pizzas. The pizzas at Grimaldi's come as close in taste to those in Napoli as I have tasted.

I really enjoyed Grimaldi's the one time I've been there. Although it's been almost a year. Quite yummy!
