I haven't been to Arizona for several years and only briefly visited the west section of the park (and now it's a nat'l park? wow) on earlier trips, but am planning to explore it more when I come out next month. Any recommendations?

yeah, it became a National Park in 1994 at the behest of then-Senator DeConcini....pure pork, if you ask me....Dennis pimped for a lot of constituents....but I digress...
there is no overnight camping in the west section...closest is Gilbert Ray CG, a county operation popular with RVs, I think.....there's a nice new visitor center at the west side you may not've seen since your last visit...nice video is shown there....very nice network of trails....the nearby Desert Museum is a must-see, too....
over on the east side, there is no overnight camping, either, unless you get a backcountry permit and hike in several miles to designated CGs....there's also a very nice network of trails over there....easy to hard....stop in at the visitor center for options....
haven't been to Organ Pipe lately, but I know some popular areas have been closed due to crosser threats....I wouldn't say the banditos have taken over....I'm sure the Border Patrol is active in the backcountry and doesn't need the RV/snowbird crowd in the way....
