My house was built in 1908 and I have a copper line in my laundry room. I am in the process of installing shut off valves on lines I am using and capping off the ones I am not. Including my dryer. It is a copper line without a shut off. Do I need to follow the copper line under the house in the crawl space to where it connects or can I cap it off at the end since I’m no longer using a gas dryer.

If you have no plans to ever reuse the gas line it would be best to disconnect it at the source, remove the copper, and trade it for beer money at the recycling center.

It should be acceptable to cap and leave it as-is behind the dryer though. With that being said, it needs to be done correctly. With copper gas lines, you are limited to what type of connections you can use. You can't use soft solder or sharkbites or compression fittings. Pretty much your only option would be a flare nut, which takes a special tool and some practice to get good at. Having old copper to work with might make it even harder. If you are good at flaring and plan to go this route, don't just cap the line. Install a ball valve with a plug in it. Then be sure to test all connections with soapy water.
