Okie's will fry anything. Try these:
Fried Okra
Fried Pies
Fried Croissants (you put the croissant in a skillet and put a weight on it to flatten it out; grill both sides; this could also be a great pannini alternative, if you want to get creative)
Fry Bread (Native American or Mexican)
Fried Fish and Hush Puppies (better than fish and chips)
Sausage balls (probably not an Oklahoma original, but they are a tasty treat that you will see at many holiday parties)
Chicken Fried Steak with white gravy and mashed potatoes
Lambfries (Mountain Oysters to some)
Have you tried a "hot hamburger"? This is a very interesting concoction that I have not tried, but I've witnessed many people eating them. It is an open-faced hamburger topped with french fries and smothered with brown gravy.
In my opinion, Texas and Oklahoma both have outstanding BBQ. When I am in Oklahoma, I always make a pit stop at my favorite places.

The original "hot hamburger" is made with mashed potatoes. A lot of people do sub FF for the mashed. I actually thought it was a national dish cause we have it up here, too. BUT evidently it isn't since you mentioned it.  You guys do have me curious now about okra. I've never tried it.

Fried okra is great. I think its dipped in corn meal. It is fantastic. Me mum used to make it when we were kids. Now I see it at bar-b-q places.

HMM, I think I want to try that stuff. Is it possible to fry it with a different batter then cornmeal? I don't like cornmeal.
SO, now I'm curious as to the state rankings for obesity since everything gets friend.  I know that Colorado is number one for fitness. Does anyone know how OK fits in there?

I've never seen the fried croissants, but they sound interesting.
*DANGER WILL ROBINSON* Google "lamb fries", "calf fries", and "Rocky Mountain Oysters" before being coerced into trying them, especially if your host is vague about what part of the animal they come from.  (Hint: They ain't oysters.)
Jammie: I have never seen fried okra breaded with anything but cornmeal, or sometimes a mixture of cornmeal and flour, but I suppose it would be possible. Breadcrumbs would probably work, but you don't want a heavy batter like beer batter for fish. The sliced okra is very moist, and just needs to be rolled in something. It's really a love it or hate it kind of dish, and a first exposure to bad fried okra will put you firmly on the "hate it" side. To be good the okra needs to be fresh and served as soon after frying as possible. Beware fried okra that's set on a steam table at a cafeteria or buffet.
As for obesity statistics, Oklahoma usually ranks in the top ten. (Bottom ten?) What winkalit said is true, if it can be fried, we will, and then we'll probably serve it floating in a bowl of cream gravy.

Vinita just had th calf fry festival, although Clantons there serves them year around.
Toby Keiths in OKC and Tulsa both serve lamb fries as does the Capri in Krebs.

I was brave enough to try grits once so I'm brave enough to try this, too.  Please tell me grits isn't a popular breakfast in Tulsa. There isn't enough sugar in the world to make that stuff taste good.  It ranks on the same level as rhubarb on my food chart.

I am with you on this one. Grits is just about the nastiest thing their is  . Although fried okra is just terrific if it is made right. Actually us Okies will eat anything if it is fried. Fry it and we will eat it!!

Real grits with butter, cinnamon and honey is the way I eat mine. Not that nasty instant stuff...
