Little House On The Prairie. Odd suggestion, I know, but even though I didn't really care much for the series, I did find the beginning and ending of this show really interesting.
It starts off with what it was like for a family with small children to leave their family and basically everything they know behind and attempt homesteading in the 1800s. They deal with a variety of challenges, including living in part of the country that has a very rough climate. We see them building the farm, seeing what (and who) lived in the nearby town, deciding if neighbors were people they could trust or should fear, trying to find work in the town, dealing with the fact that local shopkeepers may not always treat people well if they're considered poor (yet at the same time, when there are only a handful of people around you have to learn to depend on each other). It was quite an interesting look at a time in history. Very different from the typical western of that time.
Then you have several years of dopey episodes. But the final episode was one of the most interesting final episodes I've ever seen. They blow up the entire town--talk about a finale!
Of the TV series which I have seen, I can think of only two at the moment which in my opinion had both a good series opening show and a good series finale. Those were 'Frasier' and 'Eureka.'

I don't remember the opening show for Six Feet Under, but the finale was very good. I can name more bad or non-existent endings than I can name really good ones, so I'm putting this one on the list. Breaking Bad also had a great ending.
Yes, it suffered in the post-Sorkin years, absolutely -- and it never returned to the brilliance that it had in its early years, but I would still watch a "bad" episode of this show over a "good" episode of a lot of other shows any day of the week.
The first episode of the series is fantastic from beginning to end, including the fabulous introduction of Jed Bartlet.
The last episode was an excellent and dignified end to the series, and I definitely cried, especially as Bartlet looked at the "Bartlet for America" napkin he had given Leo years earlier.
The opening episode brought a broken Starfleet officer who could not let go his dead wife into a new world and gave him the chance to find himself. And the ending episode he'd been absorbed into the culture which saved him. Perfect bookends. In many ways, the series was about Sisko's journey to a place and an idenity he would not have imagined before he came.
