For dragon breath to melt gold on the fly it would have to be maybe 3000F? But don't worry, it's just a story.

"It's Magic!"
And the story is, as has now be pointed out numerous times, the gold was already inside King's landing. Hence, not melted.

1. Maybe I mis remember but didn't we see Bronn's gold coins melting? Maybe not, in all the confusion.
2. See "Golden Crown", Season 1 Episode 6

For me, with a little weapons background, we're going to need a lot of them. Maybe only one had been built so far, but there were three dragons and a target rich environment.
"We're gonna need a bigger bolt!"

No, his coins did not melt. They just spilled out onto the ground.

It might be another case of TV magic, but it's already been established in the TV series canon that dragon's fire melted the walls of Harrenhal Castle.

A quick googling shows that gold melts at 1,938F and rocks melt at somewhere between 1,100F and 2,400F, depending on whether we're talking sedimentary or igneous rocks.

I'm betting Harren the Black of the Ironborn didn't build his castle out of sandstone.

Wouldn't this be a good time for Dany's side to encourage a revolt inside King's Landing? If the word could be spread that unless the Lannisters vacated the capitol, it would be subject to dragon attack, that could be enough to turn the population into open revolt against Cersei. It isn't as though she is popular there, and if they had to face getting incinerated by dragons in order to continue supporting Cersei, that might convince them to run her out of town, or chop off her head.

Melting rocks, indeed. As an example of the physics, I find Anne Mccaffrey's dragon breath biology to be somewhat plausible (Dragon Riders of Pern) but GOT, I just have to accept.

Isn't it a bit silly to be arguing over whether or not a dragon's fire breath could or could not melt gold while conceding the fact of there being dragons in the first place?

If we want to break down the physics of things, by our known natural laws, a dragon could not exist. How could a creature be able to generate fire inside itself without burning itself to death? And what exactly constitutes dragon fire fuel? Does the dragon internally carry gallons and gallons of some combustible substance which gets ignited when exiting the dragon's mouth? If so, what is the source of the ignition? Are we to believe that perhaps unlike Earth, in Westeros cold fusion is possible?

The answer to the question..."How hot is a dragon's breath?" is..."However hot it needs to be to serve the requirements of the plot." If gold needs to be melted, well then, that is how hot it is.

Or maybe she planned to pay them, but with the loss of the food from High Garden and a large percent of her army will use the gold to rebuild both.
She originally told them that she would have payment in two weeks. Her plan was to repay the original large debts of the kingdom to secure the Iron Banks backing. In previous episodes/seasons it was laid out that whomever the bank backs generally wins, because the bank only backs winners. By repaying the debts of the kingdom, Cersei secures the backing of the bank. It accomplishes two things:

1. It prevents the bank from backing others, such as Dany, whom the bank's representative mentioned as being the "odds on favorite" to win. So, she denies others the funding they may need.

2. It secures her a new line of credit to finance her future plans. Those plans she mentions below...

...exactly, she is looking to purchase a mercenary company (she even mentions the name) and use them to help replenish her army and consolidate her hold.
