Could someone explain how taking a wight to Cersei makes sense?
They are thinking it will prove to her that they have a much more dangerous enemy than one another. But they are obviously underestimating Cersei, who is pretty obviously insane at this point.

Regarding your first question, I think the scene with Jon and the dragon was pivotal. Unlike everyone else, he never once backed away from it, gently touching it instead of recoiling.
This alone is enough for Dany to start viewing him differently, which was confirmed when she said she'd gotten used to having the King of the North around.
