I've gone through the various mentions of witchcraft and the occult in A. Roger Ekirch's "At Day's Close: Night In Times Past". There's not a single mention of the Witching Hour in it; in general, people in the Middle Ages thought the night hours were when demons and witches were about doing mischief, but not a particular hour like midnight or 3am. There is a mention in his book that people engaging in practices like the occult would do them after midnight, but that appeared to be more for privacy than anything else. Some nights were considered to be more active, like All Hallow's Eve or Walpurgis Night, but I don't see any mention of a specific time.

I've seen both midnight and 3am called the Witching Hour in the sources I've read. The term Witching Hour first appears in 1835 (which is apparently why it's not mentioned in Ekirch's work):

It appears the Devil's Hour is sometimes used to refer to 3am because Christ died at 3pm, and 3am is a mockery of His death (as is the inverted cross). My mom tells me the witching hour is when sleep is the sweetest. What she means by sweetest is when a person is in the deepest, heaviest part of sleep to where they will not easily awaken. That is when the wanting people come around. It is for this reason that we are taught to always look outside when the dogs bark.

Havent experienced paranormal activity specifically at 3am, and witching hour came from beliefs evil forces make their presence known then in mockery of the trinity. Personally, I don't believe evil forces or paranormal activity work under our constraints of time.

Witching hour's usually 11 AM, when my supervisor comes in. Especially if there's a full moon and/or he's on his period.
